light, fresh, and feel-good as the season itself? Meet Lemon Poppy Seed Bread, the

soft, citrusy, slightly sweet loaf that tastes like pure sunshine. It’s packed with real

ingredients, perfectly moist yet fluffy, and basically self-care in edible form.

What You’ll Need


  • 1 ½ cups oat flour (because we’re embracing gut-friendly choices)


  • 1 tsp baking soda


  • ½ tsp salt


  • 2 tbsp poppy seeds (for that tiny crunch and an excuse to romanticize baking)


  • 2 eggs (protein)


  • ⅓ cup honey or maple syrup (natural sweetness > refined sugar vibes)

  • 2 tbsp lemon zest

  • Optional, but highly recommended: Lemon glaze - Mix ¼ cup powdered sugar with 1

    tbsp lemon juice.


How to Make This Springtime Masterpiece:

1. Preheat the oven to 180°C (350°F)


2. Whisk the dry ingredients: Oat flour, baking soda, salt, and poppy seeds.


3. Mix the wet ingredients: Eggs, honey, melted coconut oil, Greek yogurt, lemon

zest, lemon juice, and vanilla. Stir until smooth.


4. Slowly fold the wet ingredients into the dry. Don’t overmix!


5. Bake for 40-45 minutes: Pour into a greased loaf pan and let the oven work its

magic. When a toothpick comes out clean, you know you’ve nailed it.


6. Cool & glaze: Let it chill before drizzling on that lemon glaze. Trust me, it’s the
